This vegan Mushroom Stir-Fry is a quick and tasty meal thats great for busy weeknights. Its filling and healthy because its full of vegetables and a tasty sauce.
Ingredients:
- 1 tbsp olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 bell pepper, sliced
- 2 cups broccoli florets
- 1/4 cup soy sauce
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- Cooked rice or noodles, for serving
Instructions:
Warm up a big pan with olive oil over medium-low heat
Put in the garlic and onion, and cook them until they get soft
Stir-fry the broccoli, mushrooms, and bell pepper for 5 to 7 minutes, until the broccoli is soft
Soy sauce, maple syrup, rice vinegar, and cornstarch should all be mixed together in a small bowl
Mix the vegetables well with the sauce, then cook for another two to three minutes until the sauce gets thick
Put it on top of cooked noodles or rice
