Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 2 tablespoons key lime zest
- 2 tablespoons key lime juice
- 1 teaspoon vanilla extract
- 1 egg
- 2 cups all-purpose flour
- teaspoon baking powder
- teaspoon salt
- Green food coloring optional
- Powdered sugar for dusting
Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the key lime zest, key lime juice, vanilla extract, and egg until well combined
If desired, add a few drops of green food coloring to achieve the desired shade
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Scoop tablespoon-sized portions of dough and roll them into balls
Place the balls on the prepared baking sheet, leaving some space between them
Use a fork to flatten each cookie slightly and create a crisscross pattern on top
Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, dust the cookies with powdered sugar for a finishing touch
