Ingredients:
- 1 cup quinoa, rinsed
- 4 cups vegetable broth
- 1 can 15 oz diced tomatoes, undrained
- 3 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 cup corn kernels
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 6 cups spinach or kale, chopped
- 4 cups water
Instructions:
In a slow cooker, combine quinoa, vegetable broth, diced tomatoes, carrots, celery, onion, garlic, zucchini, green beans, corn, thyme, oregano, cumin, salt, and pepper
Cover and cook on low for 6-8 hours or until vegetables are tender and quinoa is cooked
In the last 30 minutes of cooking, add chopped spinach or kale and water to the slow cooker
Stir well
Adjust seasoning if necessary before serving
