This Chipotle Corn Chowder is a comforting and flavorful soup with a hint of smoky spice from the chipotle pepper. Its creamy, hearty, and perfect for chilly days.
Ingredients:
- 4 cups corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 1 chipotle pepper in adobo sauce, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Chopped cilantro, for garnish
- Lime wedges, for serving
Instructions:
The diced onion and minced garlic should be cooked in a large pot until they become soft
After you add the cumin and chipotle pepper, cook for one more minute
Pour in the chicken broth and corn kernels, and then raise the heat to a low level
Let it cook on low heat for 15 minutes, or until the corn is soft
Blend the soup until its smooth with an immersion blender
You could also put the soup in a blender and blend it in small amounts until it is smooth
Add the heavy cream and season with pepper and salt to taste
Let it cook for five more minutes
Serve hot with lime wedges and chopped cilantro on top
