This mushroom rice pilaf is a tasty and fragrant side dish that goes well with a range of main courses. A satisfying dish is created by the earthiness of the mushrooms and the fragrant rice.
Ingredients:
- 1 cup rice
- 2 cups chicken or vegetable broth
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Melt butter in a skillet over a medium heat
Add the garlic and onions, and saut until they are soft
When the mushrooms release their moisture and start to brown, add them and cook
Stir in the rice, toast it slightly, and coat it with butter
Add broth and season with pepper and salt
After bringing to a boil, lower the heat to a simmer, cover, and cook the rice for 15 to 20 minutes, or until the liquid has been absorbed
Before serving, fluff the rice with a fork and sprinkle it with fresh parsley
