Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup eggnog
- 1/4 cup spiced rum optional
- 1/4 cup milk
- For the eggnog frosting:
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/2 cup eggnog
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cinnamon
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg, and cinnamon
Set aside
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs, one at a time, mixing well after each addition
Stir in the vanilla extract
In a separate small bowl, combine the eggnog, spiced rum if using, and milk
Alternate adding the dry flour mixture and the eggnog mixture to the butter mixture, beginning and ending with the dry ingredients
Mix until just combined
Fill each cupcake liner about 2/3 full with batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are baking, prepare the eggnog frosting
In a mixing bowl, beat the softened butter until creamy
Gradually add the powdered sugar, eggnog, vanilla extract, nutmeg, and cinnamon, and beat until the frosting is smooth and fluffy
Once the cupcakes have cooled completely, frost them with the eggnog frosting
Optional: Garnish with a sprinkle of ground nutmeg or a cinnamon stick for decoration
