Ingredients:
- 1 cup natural peanut butter
- 1/2 cup erythritol or preferred sugar substitute
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, mix together the peanut butter, erythritol, egg, vanilla extract, and baking powder until well combined
Form the dough into small balls and place them on the prepared baking sheet
Use a fork to press down on each ball to create a criss-cross pattern
Bake for 10-12 minutes, or until the edges are slightly golden
