In Spain, Chicken Afritada is a hearty chicken stew made with tomato sauce, vegetables, and spices. This dish is great for family dinners or get-togethers because it makes you feel good.
Ingredients:
- 1 kg chicken, cut into serving pieces
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 large potatoes, peeled and quartered
- 1 carrot, sliced
- 1 cup tomato sauce
- 1 cup chicken broth
- 1/2 cup green peas
- 3 tablespoons cooking oil
- Salt and pepper to taste
Instructions:
In a large pot, heat cooking oil over medium heat
Saut garlic and onions until fragrant and onions are translucent
Add chicken pieces and cook until lightly browned
Pour in tomato sauce and chicken broth
Stir to combine
Add potatoes and carrots
Simmer for about 15 minutes or until chicken is tender and vegetables are cooked
Add bell peppers and green peas
Cook for another 5 minutes
Season with salt and pepper to taste
Serve hot with steamed rice
