Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded coconut
- 1 cup mini chocolate eggs
Instructions:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, and then stir in the vanilla extract
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Cover the cookie dough and chill in the refrigerator for at least 1 hour
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Roll the chilled dough into small balls and place them on the prepared baking sheet
Press down the center of each cookie slightly to create a small well
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden
Remove from the oven and immediately sprinkle shredded coconut onto the center of each cookie
Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely
Once the cookies are completely cool, gently press mini chocolate eggs into the coconut nests
Let the chocolate set before serving or storing
