Ingredients:
- 1 lb ground pork
- 1 lb ground beef
- 1/2 cup finely chopped onion
- 1/2 cup grated sweet potato
- 2 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes optional
- 2 tbsp coconut oil for cooking
Instructions:
Set the oven temperature to 375F 190C
Combine the ground beef and ground pork in a sizable mixing bowl
Add the minced garlic, dried oregano, dried thyme, chopped onion, grated sweet potato, salt, black pepper, and red pepper flakes if you like your food spicy
Stir everything until thoroughly mixed
Roll the mixture into meatballs about the size of a golf ball, then arrange on a baking sheet covered with parchment paper
In a big skillet, warm the coconut oil over medium-high heat
The meatballs should be seared for two to three minutes on each side, or until they are browned all over, after the oil is hot
Place the meatballs that have seared back onto the baking sheet
Bake for 15 to 20 minutes, or until they are cooked through and reach an internal temperature of 165F 74C, in a preheated oven
Enjoy your hot, flavorful breakfast meatballs
