Apricot Orange Energy Bars

The healthy ingredients in these gluten-free Apricot Orange Energy Bars make them a great snack for when you need a quick energy boost. Theyre chewy, tasty, and simple to make

Ingredients:

  • 2 cups dried apricots
  • 1 cup almonds
  • 1 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/4 cup orange juice
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Warm the oven up to 175F 350C

Pulse almonds in a food processor until they are very small pieces

Orange juice, honey or maple syrup, shredded coconut, rolled oats, a pinch of salt, and dried apricots should all be added

Pulse the ingredients until they stick together and form a dough

Put parchment paper around the edges of a baking dish, leaving some overhang to make it easy to take off

Press the dough into the baking dish so that its spread out evenly

Put it in the oven and bake for 20 to 25 minutes, or until the edges turn golden brown

Take out of the oven and let cool all the way down

Cut it into bars or squares after it has cooled

Keep in a container that keeps air out for up to a week
