Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup milk
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 eggs
- 1/4 cup sponge candy bits crushed
- For the frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
- 1/4 cup sponge candy bits crushed, for garnish
Instructions:
Preheat your oven to 350F 175C
Line a cupcake pan with paper liners
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture
Mix until just combined
Fold in the 1/4 cup of crushed sponge candy bits
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely
While the cupcakes are cooling, prepare the frosting
In a mixing bowl, beat the softened butter until creamy
Gradually add the powdered sugar, milk, and vanilla extract, and continue to beat until the frosting is smooth and well combined
Once the cupcakes are completely cooled, frost them with the prepared frosting
Sprinkle the remaining crushed sponge candy bits on top of the frosted cupcakes for garnish
