This Grilled Corn Pasta Salad is a delightful combination of smoky grilled corn, sweet cherry tomatoes, and fresh basil, all tossed with pasta and a zesty balsamic dressing. Its a perfect summer side dish or a light meal on its own.
Ingredients:
- 2 cups of cooked pasta any shape you prefer
- 2 ears of fresh corn, husked
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the dressing:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat
Brush the ears of corn with 2 tablespoons of olive oil and season with salt and pepper
Place the corn on the grill and cook for about 10-12 minutes, turning occasionally, until its nicely charred
Remove the corn from the grill and let it cool slightly
Then, cut the kernels off the cobs
In a large bowl, combine the cooked pasta, grilled corn kernels, cherry tomatoes, red onion, and chopped basil
