With the light sweetness of maple syrup and the hearty texture of cornmeal, this vegan maple cornmeal banana bread is a great take on regular banana bread. You can eat it for breakfast, a snack, or dessert
Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 ripe bananas, mashed
- 1/2 cup maple syrup
- 1/4 cup vegetable oil
- 1/4 cup plant-based milk
- 1 tsp vanilla extract
Instructions:
Preheat oven to 350F 175C
Grease a loaf pan and set aside
In a large bowl, mix together cornmeal, flour, baking powder, baking soda, and salt
In another bowl, mix mashed bananas, maple syrup, vegetable oil, plant-based milk, and vanilla extract
Combine wet ingredients with dry ingredients until just mixed
Pour batter into the prepared loaf pan
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean
Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
