Ingredients:
- 1 lb bacon, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 1/4 cup brewed coffee
- 1/4 cup apple cider vinegar
- 1/2 tsp red pepper flakes adjust to taste
- Salt and black pepper to taste
Instructions:
Cook the chopped bacon in a big skillet over medium heat until its crispy
Bacon is removed, then drained on paper towels
In the skillet, leave about 2 tablespoons of bacon grease
Add the minced garlic and the finely chopped onion to the same skillet
Simmer the onions for about five minutes over medium heat, or until they are tender and translucent
Add the brewed coffee, bourbon, maple syrup, brown sugar, and apple cider vinegar and stir
Simmer the mixture for ten minutes or so, or until it begins to thicken slightly
Return the crispy bacon to the skillet and mix everything together
Cook the jam for a further five to ten minutes, or until the consistency you like is achieved
You can adjust the consistency by adding a little more bourbon or coffee if its too thick
Add salt, black pepper, and red pepper flakes to taste when preparing the jam
You can experiment with the amount of red pepper flakes to suit your desired level of spiciness
Turn off the heat source and allow the bacon jam to cool slightly in the skillet before putting it in a jar or other container
Let it cool completely before covering and putting it in the fridge
Serve the Bourbon Bacon Jam as a condiment for your preferred dishes or as toast, burgers, or sandwiches
