A simple yet delicious vegan avocado toast recipe featuring creamy mashed avocado on crispy whole grain bread, topped with fresh tomatoes and flavorful seasonings.
Ingredients:
- 1 ripe avocado
- 2 slices whole grain bread
- 1 small tomato, sliced
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Red pepper flakes optional, for garnish
- Fresh cilantro or parsley, chopped optional, for garnish
Instructions:
Toast the whole grain bread until it gets golden brown
Remove the pit from the avocado and cut it in half while the bread toasts
Put the avocado flesh in a bowl and use a fork to mash it up
Together with the salt and pepper, add the lemon juice and mix well
Cover the toasted bread slices with the mashed avocado
Add tomato slices to the top of each slice
If you want, you can add red pepper flakes and chopped cilantro or parsley as a garnish
Serve right away and enjoy
